Salmon recipe: Mediterranean salmon pasta

This recipe for Mediterranean salmon pasta is perfect for preparing at home and then taking with you. All the ingredients are cooked in a baking dish before being mixed with the pasta. The finished dish can then be taken home or to friends’ houses in the gratin dish. Either way, we hope you enjoy it!

 

The ingredients

 

  • 200-300 ml pasta water
  • 350 g pasta (of your choice)
  • 2 salmon fillets
  • 150 g cream cheese
  • 100 ml milk
  • 200 ml cooking cream
  • 1 clove of garlic
  • 1 small onion
  • 150 g cherry tomatoes
  • 60 g baby spinach
  • 1 tsp mustard
  • 1 tsp salt
  • 1.5 tsp tomato purée
  • 1 tsp paprika powder
  • ½ tsp turmeric
  • Pepper to taste
  • 1 tbsp fresh dill
  • 1 tbsp fresh basil

 

The preparation

 

  1. Prepare the salmon, tomatoes and spinach: Cut the salmon fillets into cubes, place them in the baking dish and garnish with the cherry tomatoes and baby spinach.
  2. Prepare the sauce: In a bowl, mix the cream cheese, milk, cream, mustard, salt, pepper, tomato paste, paprika powder and turmeric well. Finely chop the garlic and add it as well.
  3. Spread the prepared sauce evenly over the salmon, cherry tomatoes and spinach in the baking dish.
  4. Cook in the oven: Preheat the oven to 180°C hot air and bake the dish for 20-25 minutes until the salmon is cooked and lightly browned.
  5. Prepare the pasta: While the salmon is cooking in the oven, cook the pasta according to the instructions on the packet and drain.
  6. Gradually add the pasta water to the baked mixture until the desired consistency is achieved and mix the pasta with the sauce so that it becomes nice and creamy.
  7. To serve: To serve: Sprinkle the finished salmon pasta with freshly chopped dill and basil and serve immediately.
